Portrait One

(One of the things on my 32 Things Before 32 list is to take a self-portrait once per month. Here's August.) 


I see a lot of things when I look at this photograph. I hate to admit how many pictures I took before I landed on one that was decent, at least in my mind.  I'm usually the girl behind the camera not the one in front of the camera. I feel a lot of things looking at this photograph. I had a baby a mere seven weeks ago and I can see the extra weight on my frame and in my face. My pants are a few sizes larger than I would like them to be. I wear a lot of tunics right now. In the past, I have always shied away from being in photographs when I don't feel the best in my own skin. I don't feel the best in my own skin lately. Postpartum skin is always an adventure and a process.  Healing from a c-section has been something I would like to not have to experience ever again. I'm ravenously hungry pretty much all of the time when I am breastfeeding and never feel fully satisfied. 

Sure, I have some weight to lose. Sure, my eyes look tired because I have a seven week old and a toddler to care for. Sure, there are some things I would change. 

But, you know what else I see? I see a woman that carried two children for 9 months each in this body. I have fed and nurtured two children with this body. I see a woman that is trying her best to parent two children well and to give them the very best life that we can in our home. I see a woman that is strong and capable. I see of woman that has dreams and aspirations, goals and hopes. I see a woman that is in a season that has never before been experienced. A new challenge, a new hope. 

"From the very beginning, we grow and mature because problems propel us towards solutions. Hunger drives us to attain what we do not have; discomforts push us through frustrations. So our babies grow strong, creative, and smart-- because they persevere. In the same way, our adult minds and bodies do not thrive through comfort, but challenge. Baby Sullivan | A Birth Story


My due date with Sullivan was Friday, June 30th. Just like last time with Marin, we blew right past that day and I knew that we would still be waiting for a bit of time before his big arrival. My maternity leave officially started July 1st and I was left to wait and wait and wait. Luckily, I didn't have to wait nearly as long as Marin (you can read her birth story here). With her, we were 10 days overdue and I thought I would be pregnant forever. I was ready for Sullivan's arrival whenever he was ready and willing to enter into this world. I had told Ryan that I thought we would have him Monday. 

And we did. 

Sunday, July 2nd was like most days aside from the fact that this was my first official day off from work. It felt pretty strange to not be getting up at 5am and heading into the walls of church to start the day. I won't walk those halls for a little while and that's still strange to me. It's odd to know that time moves on swiftly without you and you have to be alright with realization. 

Marin and I hung out for the day. Ryan went to work. I remember sitting at the kitchen table with Marin. She was eating her typical dinner that included dinosaur chicken nuggets, of course. She eats VERY SLOWLY most of the time so we were just chilling and talking about Baby Sully. I kept getting this feeling though, this evening it would happen, I would go into labor. My body was telling me to get ready. My mind was going through all of my lists and I couldn't help but wonder if I had packed everything that we would be needing once we got to the hospital. 

At 8:50pm that night my water broke in our kitchen. I had been having a good deal of more intense contractions by that point. Our amazing doula, Tamara, was notified and was sitting at my kitchen table when my water broke. My water breaking was so different than with Marin. It really was like in the movies where you are at the supermarket and the next thing you know you are wondering if you wet yourself as you stand in a puddle. This was only the beginning. 

We labored at home for many hours. I decided to watch the new episodes of the X-files to keep my brain occupied as I recorded contraction times on my phone. We made it four episodes in and then tried to lay down and sleep for a while. The contractions kept waking me up because their intensity was slowly increasing. We decided it was time to head to the hospital. 

We pulled into the hospital at 3am, July 3rd. Checked in, got hooked up to monitor the baby, and continued to labor. 


I soaked in the huge bath tub for a long time, smelling of essential oils, and taking each wave of contractions as they would come. 

Time passed and we found that my contractions were getting slower. They administered Pitocin in an IV to try and jump start the process. I had somehow forgotten the pain from Marin's birth. You go to this place, this deep, guttural place where you have to become a warrior and just face the pain. You must ride the wave of contractions. You must let your body do its thing. I am so incredibly thankful that we had our doula with us again. I truly don't think I would have made it through this point without her. She would help me get through the contractions by pushing on certain pressure points and was a support system that Ryan and I are very thankful for.

I did that for what seemed like an eternity. Then is was time to push. I pushed for quite a while. A contraction would hit and then everyone would yell, "PUSH, PUSH, PUSH!!!!!" I did. I gave it everything I had within me. 

By this point we were about 13 to 14 hours in. The pushing just wasn't working. 

This is very similar to what we went through with Marin but this birth story ends a bit differently than hers. 


At first it was hard for me to accept this because I like to be the strong woman, hear me roar. I birth babies with no meds! But, we decided the best route for Sully was a C-Section. This was not in my birth plan. I didn't want to have one going in to the birth but if it meant that I would be holding my baby boy in my arms and that he was healthy, I was fine with it.

While I was still in a wave of contractions, they rushed me to OR to administer a spinal. I have never experienced anything like that before. It's the strangest sensation to realize that you cannot feel half of your body, at least completely. My entire upper half was trembling the entire time, my teeth were chattering and I couldn't seem to calm down. Everyone there was so amazing and helpful though. Even though we were in a situation we didn't really want, I knew we would be fine.


They said that the cord had been wrapped around his neck and that I have an anterior lip that was keeping him from coming through the birth canal fully. This is similar to what we faced with Marin but Sully was such a big baby, a c-section was the route to take. 

My hubby would make a good looking doctor. 
I heard his cries for the first time and knew that there was a light at the end of the tunnel. He was here. 


Sullivan James Hollen. Born at 12:30pm on July 3rd. 9 lbs, 8 oz. 21 inches. 



He was a lot bigger than we were fully expecting. He didn't fit newborn diapers from the get go and was in size 1 the day he was born. I had one outfit in the hospital for him that I packed that luckily fit him. He's a tank and I love him. 

Slowly getting more confident. 


Marin is thrilled, excited, and a little sheepish around her little brother but is going to be a great big helper. 

Sully brought Marin a new movie as a Welcome to the World present. 

Our lives will never be the same.

What's In My Bag | Hospital Edition



Our bags are officially packed. We are officially as ready as we will ever be for this little man to come into the world. I'm due on Friday and now we just hurry up and wait. I remember this feeling from last time and Marin decided to take her precious time and wait until ten days after my due date to grace us with her adorable presence. I know a due date is just an estimate, more like a little suggestion to make pregnant mothers go a little bit crazy. 

I am a planner. The waiting and suspense just about kills me by this point but I'm trying to just tie up lose ends at work. Get the the house ready. And wait. And wait and wait and wait. Everyday I go to bed at night I wonder if we will be having a baby in the next 24 hours or not. So far, not. 


Last time we did this, I feel like I packed more? Maybe I did. I honestly don't completely remember but I feel like this time around, we are in a good place packing wise. There's one bag for the hospital and a canvas grocery bag full of snacks and random other items that we will throw in last minute. I plan on putting some minimal make up in and my flat iron. We will need to toss in the phone chargers. But overall, the bags are packed. 

I've also packed a bag for Marin because once I'm in labor and we head to the hospital, she is heading to the grandparent's house and will hang out there until she can come meet her new baby brother.

Now we wait. I'm ready to not be pregnant any longer and to meet this little guy. Come on, Sullivan! 









A Baby Shower for Baby Sullivan


A few weekends ago, my awesome family, mostly Grammy & Grandmadoo,  threw a baby shower for Baby Sullivan. We are planning on having a dinosaur themed nursery so we had a dinosaur party as well. This little guy is super blessed to have a family like this and we haven't even met him yet. We ate lots of amazing chicken from Raising Canes. There was potato salad and cheesecake. It was wonderful. 


So obviously, if you didn't catch it already, we have decided to name him Sullivan James. We have been spending the last few weeks preparing for him and everything is almost ready. I am very ready to not be pregnant anymore. I'm in the uncomfortable phase where I have round ligament pain almost all of the time. I have to go to the restroom a million times per day and I'm up a few times at night. Pregnancy insomnia has been pretty bad lately too. But, overall, everything is looking good and baby boy is growing well. I was 36 weeks on Thursday. Only a few more weeks. 



I'm very curious as to when we will actually meet this little guy. Will he arrive early? Will he arrive ten days late like his big sister? Who really knows. Now, we wait. I'm packing my hospital bag this weekend. We are working on getting the nursery ready. I'm organizing closets and cupboards like a crazy person. 



Thank you to everyone that poured so much time and awesomeness into the baby shower and to bringing this little guy into the world. He is already well loved and I am so thankful for all of it. Marin also loves all of the dinosaurs that now inhabit our home. 









It's the Weekend | Number Eleven

The current chaos of the nursery and my mind. 
We've made it to another Saturday. I'm officially about 7 weeks away from meeting our new little dude. I'm getting more pregnant and tired by the day but I know that it will all be worth it in the end. But, I am pretty ready to no longer be pregnant. We are on the home stretch and I'm just trying to get everything in as much order as we possibly can. I've been planning my leave at work. There's a number of things around the house that need to be done or just forgotten about. We went to a birthing class last night with our doula and everything just keeps getting more real. 

This week, I've been reading a lot of things for mothers due to the fact that Mother's Day is tomorrow. I'm always looking for clever parenting hacks or ideas. I've been reading a lot about screen time and how it affects our children or how we need to get outside WAY more than we do now.

It's The Weekend | Number Seven

Prego Belly & Sidewalk Chalk 

This weekend I hope to finish our little gal's new pink room. We still need to build a bookcase and get her rug in her room. It's very pink and it's very fun. After that project is finished, I get to move on to the little boy's nursery. I am officially in my third trimester and I keep realizing how quickly time is flying. Holy cow, we have 12-ish weeks left!!! I feel like I was just starring at a positive pregnancy test at the end of October, while on vacation.

Here are the places I've been clicking this week. Lots of it has to do with food because I feel like I'm constantly hungry. Some links are about parenting because I've obviously had that on the brain. Some are about paint. Food, family, and home. Those are the things on my brain lately. You can look forward to a post on Marin's new big girl room and some more mom guilt rants in the near future. I'm sure of that.

Mom Guilt | What Keeps Me Up At Night


Last week we had a few rougher nights due to sickness in our family. One night in particular, Marin woke up around 1:30am coughing and crying. I went in and gave her some medicine. Luckily, she went straight back to sleep after that instead of trying to fight staying up. I on the other tried to go back to bed but proceeded to toss and turn for hours upon hours. My brain didn't want to slow down, shut off, and just rest. Instead, it mulled a million miles per hour and anxiety began to bend and sway within me. I'm not even totally sure how long I was awake for but it was bad enough that I was considering just getting up and working on stuff, at 3am in the morning. That's when you know it's bad. 

Laying there, I was just so anxious. For so many things. The biggest was regarding my job. I have discovered that I have this fear of going on maternity leave and everything either completely falls apart or they realize that they can do it all without me. This anxiety begins to well up hugely inside of me at 3am in the morning and causes me to be so torn. I want to be able to have our son and focus on him for as many weeks as I can before we have to dive back into reality again. No deadlines, agendas, emails, or projects. Just us. Just family. 

There's this thing in our society that tends to torment me. I think it's completely destructive and detrimental to mothers and fathers everywhere. You have to still do EVERYTHING, as you did before. Don't rest. If you rest, you job and life will move swiftly on without you. You must be at the top of your game at all times. No gaps in your career or resume. You want a career right? Blah, blah, blah. 

These are things that keep me up at night, that and pregnancy insomnia. Mom guilt is a real thing. I want nothing more than to take 6 weeks of our lives to figure out how to be a family of four and bring our new son into the world. This may very well be the last time we ever get this opportunity. I don't want to feel guilty about using my rights and benefits to spend time with our growing family. No more guilt. I know I can prep and plan. I know I can put things in place to help make this transition safe and secure. I know that my job is super awesome, as are our maternity benefits and I need to not worry about these sort of things. 

With my leave with Marin, I took twelve weeks but was still so very consumed by my job. I never fully embraced all of the new experiences of motherhood and those first few weeks are a total blur to me. Those first few weeks were so hard. I can never get them back. I was too worried about calendars, payroll, and getting my job done even though I was supposed to be on leave. 

My plan is take 12 weeks with our son. The first six...I don't even want to think about work. The last six, I'll work part time from home. The transition to having two kids is a big one for me. I am anxious and have no idea how to navigate life. As long as I don't try to everything all of the time, I'm sure we will be fine. 

This is what keeps me up at night. 

A Pregnancy Update | 25 Weeks




When I was pregnant with Marin, I barely took any photos of my ever growing belly. It really wasn't until she was out in the world that I started documenting her life with weekly posts. This new pregnancy has been much of the same. I will be honest and open with you and say that being pregnant isn't one of my most favorite things in the world. I'm not one of those women that just love to be pregnant and I'm alright with that. I'm also not one of those women that have cute little basketball bellies and hardly look pregnant elsewhere. I show my pregnancy EVERYWHERE. Don't get me wrong, the miracle of life is a crazy journey and being able to experience it all for a second time is a huge blessing. But, my ever growing waistline and weird pregnancies dreams and pains are all part of the process. I also can't tie my own shoes very well and Ryan has to help me with my converse sneakers.



This pregnancy has been pretty different from my first. This time around I was way more sick in my first trimester. I puked a lot this time around and felt pretty horrible for a while. I feel like I'm finally out of that now and I'm thankful to want to eat something other than saltines and drink ginger tea. I also have had so much heartburn!

I have crazy dreams pretty much every night. They are super vivid and I normally remember most of them. Sometimes I wake up and wonder what in the heck I was thinking about before I fell asleep. Super weird stuff. I've been trying to write them down in my morning pages just because I like going back and laughing at myself and my craziness.

I feel like some of my cravings have been the same. I want to eat a lot of cereal, specifically Special K or Honey Bunches of Oats.  I've been dreaming about sushi for a few weeks now. I finally can eat chicken without totally being grossed out. I have wanted more healthier options this time around, which has been helpful. I crave big salads with lots of veggies. I love anything involving Mexican food and green chili and hot sauce.  I would gladly eat a salad from Cafe Rio every single day, with extra guac. Oddly enough, the turkey bacon breakfast sandwich from Starbucks is something I look forward to and I usually have one on Sundays for work. I'm making myself hungry just thinking about it. I've also wanted to drink lots of La Croix Seltzer and unsweetened iced tea.



We only have 15 weeks or so left and I cannot believe it. Time is flying. I want to get into full nesting mode. I have the sudden desire to paint every room in our house, replace all of our crappy closet doors, and organize cupboards. I'll embrace it all while it's here. Having a newborn and a toddler terrifies me but I'm also looking very forward to meeting the newest addition to our family.

I'm trying to soak it all in. Unless something majorly changes, I believe this will probably be our last child. This will be my last pregnancy. I do want to soak it all in even when I'm feeling crappy and huge. I'm super thankful to be able to experience all of it.







Baby Marin | Week Fifty



2 more weeks. 2 more weeks until our little baby is a one year old. This time last year, I was big and pregnant and waiting for her arrival. February 8th was my due date. We went far past that day and Marin took her precious time in getting here. We waited until ten days past my due date. We did lots of waiting, and wondering, and waiting some more. 



Marin and I try to make a trip to see the Great Grandparents once a week or so, as our schedule allows. I always love going down. It gets us out of the house and she always has fun. We usually have lunch and play on the floor. We usually make the trek down after her morning nap and hang out until right before her afternoon nap. That's what we did today, although as I write this, she is supposed to be taking a nap and I can hear her playing around in her crib. Go to sleep, child. 



Marin has been fighting a gnarly cold the past few weeks. Her nose finally has stopped running constantly but she now has a lovely cough instead. Having a sick baby is a tough thing. She really hasn't been sick at all yet, so this feels like new territory. It's tough when they can't tell you what's going on and you just make sure they are comfortable and cozy. I am ready for this sickness to be out of house.

2 more weeks. 

Baby Marin's Birth Story


3 weeks and a few days ago, our lives were forever changed. We waited ever so patiently for our little girl to make her way into this world. I was ten days past my due date. People were consistently asking me whether or not I had a baby yet. I started to not answer the text messages and phone calls because it felt like she was just going to stay in there forever. (Sorry if I ignored any of you.) I spent many times wondering if this was it. We even had two false starts that ended up at the hospital only to be sent home after blood was drawn, baby was monitored, and ultrasounds were completed. 

I knew she would come when she was ready, but I was impatient. But, at the same time, I didn't want to try any of the old wives tales to try and get her out quicker. I wanted her to come in due time.

And she did. I won't ever be the same.



Our birth plan going into all of this was to labor without medication or an epidural. I wanted to see what my body could handle, to discover a strength I didn't know I had.

Monday night (February 17th), I began to start tracking my contractions with more consistency. What I didn't realize at the time was that these were still pretty wimpy,  Braxton Hicks-like contractions. We went to bed far too late that night because I didn't want to fall asleep but knew I should. I watched too many episodes of the Gilmore Girls before finally drifting off.

Around 3:30am, I got up to go the bathroom only to realize that my water broke. I knew it was game time and went and woke up Ryan.

Our doula, Tamara, came to our house at around 4:15 that morning. I started to experience true contractions. Gut-wreching and painful. They were nothing like the contractions I had been experiencing in the weeks prior. With each new wave, I knew that it would be a long day. I just kept telling myself that this was it. She would be here at some point either today or the next. The process had begun and I just needed to buckle down and face it. These were the hours that would be life changing.

One of the things I will forever remember while laboring at home was the fact that Ryan, Tamara, and I just sat in our living room and watched episode after episode of the show Dirty Jobs. That show will now forever remind me of that day. Tamara made us some eggs early that morning and I promptly managed to throw them all up. That happened a few times.

A bath and shower later, I managed to get some pjs back on and we knew we were headed for the hospital. I never realized how bumpy Mulberry Street is on the way to the hospital. Every. Little. Bump. Prospect has road construction so we knew to avoid it. We arrived at the hospital around 11 am, got into our birthing room, and was promptly hooked up to the monitors to see how baby was doing.


At this point I was 8 cm.

I sat in the bath for a while after we arrived and just kind of took the waves of contractions again and again. The pain was pretty unreal, but I knew it would all be worth it. I sat on a birthing ball for a while after that.

I started pushing around 1pm. I'm not really sure of the time stamp by now. I pushed for 3 hours which was an experience like no other. We tried different positions and tactics. There were so many times where I wanted to give up, the pain was overwhelming. I didn't think I could possibly push anymore. I almost felt like I was experiencing all of this outside of myself.

During one of my checks, the doctor and nurses discovered that Marin was facing "sunny side up." This would explain why she was taking so long to make it through the birth canal. There was discussion of an epidural and even a C-Section. I knew I didn't want that. I hadn't worked this long and hard just to go in that direction. Since I had been pushing for what seemed like forever, we decided to have some pain meds pumped through my IV. I was exhausted. I didn't think I could push any more. I knew I needed to get her out into this world.

So, I had some meds. At first this bugged me, but within about ten minutes after it was administered, Marin made her entrance into this world. It was the final push (pun intended) that I needed to get her out.

She arrived at 4:28 pm on February 18th. 8 pounds 4 ounces, 21 inches long. I heard her cries for the first time. She was rushed off to the side because of her traumatic entrance. Her head was shaped like a cone when she arrived. They had to place her on oxygen. I was only able to see her for a split second, tears forming in my eyes, and then she was taken to NICU due to a running a temperature.


This is the part that I didn't like. I wasn't able to breastfeed my baby right away. Skin to skin. She was away from me for a good 3 hours. I believe that this is part of the reason why we had so much difficulty breastfeeding in the beginning. I didn't get that time.



But, overall, after 14 hours of pain like I had never experienced before, our little girl was here. That was all that mattered.

It was all totally worth it. I will never forget this day. It changed me in so many ways.







Prep During Pregnancy: Freezer Meals


I am planner. Most people that are close to me know this to be true. Most people that aren't even that close to me probably know that to be true as well. I plan. I make lists. I like to be prepared so I don't end looking like an idiot somewhere down the road. It's how I've always been. 




While pregnant, I became fairly obsessed with planning out certain areas of our lives once baby arrived. (I know all of you seasoned parents are probably laughing at that...) I constantly was on Pinterest (follow me if you'd like: here), pinning freezer meals and grocery lists, what to pack in my hospital bag, the minimal necessities for a newborn, etc. The list goes on and on. Seriously, what did we do before Pinterest? 


A few weeks before Marin arrived, I gathered up some recipes from Pinterest and from my normal cooking routine and planned a day where I would create as many freezer meals as possible. I knew that once baby arrived, the last thing I would want to do is cook a bunch of stuff. I also knew that I needed these meals to be decently healthy and clean because I would love to actually fit into my pre-pregnancy pants at some point in the next few months. 


I made a list. Ryan and I went to the grocery store and bought all of the supplies, which ended up being quite affordable. I wish I would have kept the receipt as a reference. 


The next day, we got home from church, and I placed all of my cooking ingredients and supplies out on the counter and went to town. I created freezer meals for about 3 hours but ended up with probably one or two month's worth of freezer meals. 


My feet hurt. I sweat up a storm. I rocked out to Pandora in my kitchen while my cat tried to avoid the kitchen and the crazy, list-making, pregnant lady. 


Here are the meals I made this time around. If I found the meal elsewhere, I will link to the recipe I used. 

Tortellini Bake: (my own creation) 
Jar of Tomato Sauce
Chicken Sausage
1 Bag of Frozen Broccoli
Shredded Mozzarella (Reduced Fat) 
Shredded Sharp Cheddar (Reduced Fat) 
1 bag of Frozen Tortellini
Italian Seasoning to taste

Directions: 
In a glass baking dish, place tortellini in dish. 
Cut up the sausage into bite size pieces, place over tortellini. 
Spread out bag of frozen broccoli, layering over tortellini and sausage. 
Do the same with the jar of tomato sauce. 
Add italian seasoning
Cover with mixture of mozzarella and sharp cheddar. 

When ready to eat: 
Let thaw
Preheat over to 400
Cook for 20-30 minutes or until cheese is melted
Enjoy! 


Chicken Broccoli Alfredo
1 ½ pounds chicken breasts
1 (16 oz) bag frozen broccoli florets
2 (16 oz) jars Alfredo sauce (I use light)
1 large green pepper, chopped

Directions:
Place all ingredients in a resealable gallon-sized freezer bag and mix together.
When ready to eat, remove from freezer and thaw in fridge for 24 hours. Cook on LOW for 4-6 hours. 
Serve with cooked fettuccine noodles and green salad


Hearty Beef Stew
1 pound beef stew cubes
4 carrots, sliced
4 red potatoes, cut into large cubes
1 package dry onion soup mix
2 cans 98% fat-free cream of mushroom soup
1 (8 oz) can tomato sauce
1 (10 oz) package frozen green peas
Directions:
Place all ingredients in a resealable gallon-sized freezer bag. Mix together and zip bag closed. When ready to eat, remove from freezer and thaw in fridge for 24 hours. Cook on LOW for 7-10 hours (or HIGH for 5-6 hours).

Chicken and Sweet Potato Stew
4 boneless, skinless chicken breasts, cut into bite-size pieces

2 medium sweet potatoes, peeled and cubed
2 medium Yukon Gold potatoes, peeled and cubed
2 medium carrots, peeled and cut into 1⁄2-inch slices
1 can (28 ounces) whole stewed tomatoes
1 teaspoon salt
1 teaspoon paprika
1 teaspoon celery seeds
1⁄2 teaspoon freshly ground black pepper
1⁄8 teaspoon ground cinnamon
1⁄8 teaspoon ground nutmeg
1 cup nonfat, low-sodium chicken broth
1⁄4 cup fresh basil, chopped

Combine ingredients minus broth and add to gallon Ziploc bag. Freeze. Thaw add broth and cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours. Serve over hot rice. Serves 6-8 people.

Chicken Enchiladas 
3 chicken breasts
1 cup chopped onion
3 cups shredded cheddar cheese
10-12 flour tortillas {medium}
2 cans of red enchilada sauce
1 can black beans

How to Make It:

Take the raw chicken breasts and place them in a pot of water, boil for 20-25 minutes or until cooked through.  
Once the chicken is cooked remove from pot and shred {I use two forks and pull it apart}. Set aside.
Drain and rinse the can of black beans.
Mix the beans, chopped onion, shredded chicken, 1 can of red enchilada sauce, and the shredded cheddar cheese in a bowl.
With a spoon fill each flour tortilla, roll them up, and place them with the seams down in an 8x8 baking dish {don’t forget to spray your pan so you don’t stick!}. There should be enough to make three 8x8 pans.
Pour the second can of red enchilada sauce over the top and sprinkle some cheese over it.

Thaw when ready to eat. 
Preheat oven to 350
Bake for 25 minutes.

Chicken Taco Chili 
1 can No Salt Added Black Beans
1 can No Salt Added Kidney Beans
1 can Rotel (tomatoes/green chilies) 
1 can tomato sauce (the smaller can) 
1 packet of taco seasoning (try to find one that isn't packed with sodium.) 
1 bag of frozen corn
A few frozen chicken breasts (I use the smaller tenderloins) 
A few dashes of chili powder
A few dashes of Cumin 

Directions: 
(This is the original recipe, not already frozen. Just toss the contents of the freezer bag into the crock pot.) 

Place beans, corn, tomato sauce, and rotel in the crock-pot. Stir in the packet of taco seasoning. Add chili powder and cumin. Stir, stir, stir. 

Place as many frozen chicken breasts that can fit on the top of the chili. Don't stir it. Put the lid on and cook on high for about 6 hours or so. You want the chicken completely cooked. 

Once the chicken is completely cooked, remove the chicken pieces from the crock-pot. 

Shred the chicken. Once that's done, dump the chicken back in the crock-pot. Stir the chicken thoroughly into the chili. Let it simmer for a while longer. 

Serve and enjoy! We usually put a little bit of cheese on top and dip corn chips in the chili.

Turkey Burritos: (my own creation) 
Lean Ground Turkey
2 Cans of Pinto or Kidney Beans
2 Cans of Black Beans
1 Can of Rotel
Reduced Sodium Taco Seasoning
Chili Seasing
Whole Wheat Tortillas
Reduced Fat Shredded Mexican Cheese

Directions: 
In a pan, thoroughly cook the ground turkey. 
Once cooked, add cans of beans and can of Rotel
While simmering, add seasoning. 

To assemble burritos, scoop contents of pan into individual burritos, add some cheese, roll up in tin foil and free. 

Let thaw a bit before reheating when you are ready to eat! Add salsa if desired. 

Pre-made Smoothies 
I also created individual ziploc bags for smoothies. 
I added some frozen fruit (low sugar) which included mangos and pineapple. 
I sliced some strawberries and whatever other berries I had on hand. 
Add a few spoonfuls of greek or low fat yogurt. 
Add a few handfuls of spinach.
When you want to enjoy the smoothie, just add a liquid of your choice: Milk, Water, Juice, etc. 
Blend thoroughly.
